Rinse the shrimp under running water and dry them well with a paper towel.

In a bowl, mix lemongrass, garlic, fish sauce, ginger, shallots, oil, salt, and ground red pepper.

- Vegetable oil: 2 teaspoons

Put the shrimp in this bowl and coat them in the marinade. Leave in the refrigerator for at least 1 hour, or up to 8 hours.
