Turkey baked 'a la buzhenina' is a dish that combines the tenderness of meat with the rich aroma of spices. This cooking technique resembles traditional buzhenina but uses lighter, dietary meat. The recipe's origins trace back to American cuisine, where turkey is an integral part of festive meals. Seasoned with a mixture of spices and garlic, the meat absorbs deep flavors while baking in foil preserves its juiciness and tender texture. Chilled turkey becomes an ideal base for sandwiches, appetizers, or a standalone dish that can be served hot or cold. The balanced combination of ginger, paprika, curry, and two types of pepper adds spicy notes to this treat while oregano completes it with fresh herbal tones.

1
Thaw the turkey thigh fillet (if frozen), wash it, remove the skin, and cut out the veins.
- Turkey thigh: 900 g
2
Peel the garlic, cut part of it into pieces (for stuffing), and press a few cloves.
- Garlic: 5 clove
3
Salt the turkey to taste, make cuts in the meat with the tip of a knife, and stuff it with garlic.
- Salt: to taste
- Garlic: 5 clove
4
Prepare the marinade: in a bowl mix sunflower oil, ginger, paprika, curry, white pepper, black pepper, oregano and minced garlic.
- Unrefined sunflower oil: 3 tablespoons
- Ground ginger: 0.5 teaspoon
- Ground paprika: 0.5 teaspoon
- Curry powder: 0.5 teaspoon
- Ground white pepper: 0.5 teaspoon
- Freshly ground black pepper: 0.5 teaspoon
- Dried oregano: 1 teaspoon
- Garlic: 5 clove
5
Divide the turkey into 2 parts, make many small punctures, coat well with marinade, place in a bowl, and coat both parts in the marinade. Refrigerate for at least 1 hour.
6
Lay out the foil, tightly pack each piece of meat, and wrap it in several layers of foil. You can also press it into a brick after wrapping.
7
Preheat the oven to 190-200 degrees. Place the briquettes in a baking dish (or on a baking sheet) and bake for one hour.
8
Let it cool in the oven for about 15-20 minutes. After completely cooling, place the turkey ham in the refrigerator.
