Chicken Chkmeruli

Chkmeruli is a traditional Georgian dish known for its rich creamy-garlic flavor. Originating from the mountainous region of Racha, it embodies coziness and home warmth. Pieces of chicken fried to a golden crust are soaked in a fragrant sauce of garlic, herbs, and spices, making them incredibly tender and juicy. We trim excess skin, fat, and the tail from the chicken. We cut the chicken in half lengthwise. We cut it into quarters. We pound two quarters and rub them with salt. We add pepper. We brush with vegetable oil.
- Chicken: 500 g
- Salt: to taste

We are preparing the sauce. Peel and chop the garlic. Place it in a bowl. Chop the parsley and cilantro. Add to the garlic. Pour in the cream. Add pepper and salt. Mix. Pour in a little water. Mix. Add khmeli-suneli with mint and khmeli-suneli with coriander. Mix.
- Garlic: 6 cloves
- Coriander leaves: 30 g
- Parsley: 30 g
- Cream: 500 ml
- Ground black pepper: to taste
- Salt: to taste
- Water: 200 ml

Place the chicken in a heated pan. Fry on both sides until half-cooked. Transfer the chicken to a baking dish. Drizzle with sauce. Bake at 185°C for 20-25 minutes. Serve at the table. Enjoy your meal!
