Potato casserole with vegetables is a cozy and hearty dish from Ukrainian cuisine, rooted in rural tradition where food should be simple yet nourishing. The tender mashed potatoes form the base, while the aromatic vegetable filling with mushrooms, carrots, and onions adds rich flavor. The sour cream crust gives the casserole softness and an appetizing golden hue. Thanks to the harmonious combination of ingredients, the dish is not only nutritious but also versatile: it can be served as a standalone treat or as a side dish to meat dishes.
