Rub the meat with salt and pepper on all sides, place it in a pan, and fry over medium heat. After 10 minutes, add the sliced onion.

After adding the onion, fry the meat for another 20-25 minutes until the internal temperature of the pork reaches 65-70 degrees. Add finely chopped garlic to the pan 5-7 minutes before the meat is done.

Transfer the cooked meat to a plate and cover tightly with foil.

Pour wine into the pan with the remaining onion and garlic, stir and bring to a boil. Transfer the sauce to a pot, add dried cherries and cloves, bring to a boil again, and cook for 15 minutes.

Remove the pot from the heat, blend the sauce until smooth. Add butter and honey, and mix well.
