Deep-fried cherries vareniki

The cherries for these vareniki do not need to be defrosted in advance, just remove excess ice when forming the filling.

For the dough, mix 0.5 kilograms of wheat flour and 430 grams of potato starch, break in 4 eggs into the mixture, and knead the mass with your hands. Gradually pour in cold water starting with one tablespoon and add as needed: the dough should become uniform. Place the ball on a floured surface and knead well; the dough should be silky and not stick to your hands. Cover with plastic wrap and let it rest at room temperature for twenty minutes. Roll out to a thickness of 3 mm and cut out circles about 8 cm in diameter.
- Dough for dumplings: 1 kg
- Sugar: 150 g

Pour refined vegetable oil into a deep pan and place it over medium heat.

Make dumplings. Place three to four frozen cherries in the center of each circle, sprinkle with a good pinch of sugar, and add a bit of vanilla beans scraped from the pods. Seal the edges.

Drop the dumplings into heated oil: remove with a slotted spoon after three to four minutes, when they turn golden, and place on a plate. Sprinkle with powdered sugar.
