Turkey cutlets with spinach

Turkey and spinach cutlets are a healthy and delicious dish. The history of such cutlets is rooted in traditional European recipes, where meat is complemented by fresh herbs. Make minced meat from turkey fillet.
- Turkey fillet: 500 g

Blanch spinach in boiling water for 4 minutes, then drain in a colander and let the water completely drain. Cool to room temperature and cut into strips with a sharp knife.

Frozen spinach can also be used. In this case, it should be thawed in a colander first to let all the excess liquid drain. Then squeeze it a little more.

Place chopped spinach in a bowl, add minced meat, 2 eggs, flour (or breadcrumbs). Season with salt and pepper and mix until all ingredients are combined. The mixture should be thick and hold its shape.

Form small patties with wet hands. Quickly dip in lightly beaten egg, then coat in flour or breadcrumbs. Immediately place in a heated pan with olive oil.

Fry on both sides over medium heat until golden brown (about 3-4 minutes on each side), then keep them on low heat under a lid for 4-5 minutes.
