Georgian-style fried fish in sour cream marinade is a dish that reflects the rich traditions of Georgian cuisine. Marinating white fish in sour cream with apple vinegar gives it tenderness and a slight acidity that pairs perfectly with the crispy ciabatta coating. Fried to a golden crust, the fish acquires an appetizing aroma, and the addition of chili pepper adds a spicy kick. This dish is ideal for both family dinners and festive gatherings as it combines simplicity in preparation with rich flavor. Serving it with herbs and a glass of white wine allows one to experience the magic of Georgian gastronomy, where simple ingredients transform into culinary masterpieces.

1
Marinate any white fish (I have white amur) in a mixture of sour cream and vinegar (3:2) and leave for a couple of hours.
- White fish: 500 g
- Sour cream: 150 g

2
Bread the fish in good breadcrumbs (I have homemade ones) made from ciabatta and fry in a well-heated pan with vegetable oil until golden brown, season with salt, pepper, and add chili.
