Prepare the filling: grate the cheese, chop the herbs, crush the garlic, season with salt and pepper, add favorite spices, and mix. The herbs will prevent the melting cheese from leaking, while the cheese will keep the chicken from becoming too dry.

Make a cut along and deep into the chicken breast with the sharpest knife. It's better not to cut all the way through, so the filling won't escape from the other side. Use your fingers to stretch the resulting pocket and place as much filling as possible inside.

Mix breadcrumbs, khmeli-suneli, salt (carefully, as there's already some in the filling), sesame for decoration, and coat the chicken with it. You can use any favorite spice instead of khmeli-suneli.
