Kystyby is a traditional dish of Bashkir cuisine, easy to prepare but incredibly cozy and tasty. It is a soft, golden flatbread filled with tender mashed potatoes and aromatic onions fried in oil. Kystyby has long been a hearty and affordable food for nomadic peoples, replacing bread and becoming part of everyday meals. Its delicate flavor with subtle creamy and slightly sweet notes pairs perfectly with hot tea or milk. Prepare the dough. Combine all ingredients (0.5 cup of milk), knead. Cut the dough into pieces, roll out thin flatbreads, and bake in a hot dry pan on both sides until golden brown. Wrap the finished flatbreads in a napkin to keep them soft.

Prepare the filling. Boil the peeled potatoes, mash them with milk (0.5 cup) and butter. Peel the onion, dice it, fry in vegetable oil, and mix with the puree.
