Preheat the oven to 250 degrees.

Thoroughly wash the chicken, dry it, and cut it into 8 pieces. Peel the onion and cut it into quarters lengthwise. Peel the garlic.

- Garlic: 10 cloves

Grease the chicken pieces with softened butter, season with salt and pepper.

- Coarse salt: to taste

Place the chicken in a dish, arrange the onion and garlic next to it, and add thyme sprigs. Send it to the oven for 20 minutes until the juices are released. Baste the chicken and vegetables and cook for another 15-20 minutes until done and golden brown. Transfer the chicken, all the onion, and 7 cloves of garlic to a plate.
