Open pie is a classic Russian dish that combines the tenderness of puff pastry with a flavorful filling. Its origins date back centuries when pies held an esteemed place on festive tables. This version uses chicken fillet, mushrooms, and vegetables complemented by sour cream and cheese, creating a rich, creamy taste. Baked to a golden crust, it acquires crispy edges and a soft, juicy center. The open pie is convenient for serving — it can be sliced into portions and served as a main dish or appetizer. It pairs perfectly with light salads or refreshing drinks, making the meal cozy and satisfying.

1
Thaw the dough, roll it out, and spread it in the baking form to create low walls (maximum 5 cm).
- Puff pastry: 250 g
2
Finely chop the chicken fillet, mix it with chopped mushrooms, vegetables of choice, spices, add a bit of grated cheese (50 g), sour cream, and crack an egg in. Mix well.

- Champignons: 200 g
- Vegetables: to taste
- Hard cheese: 150 g

When a yellowish crust appears and the mass slightly hardens, take it out, pour out the remaining cheese, and put it back in the oven until a golden crust forms.
