Put the bacon in the freezer for 15 minutes. Then, if it's a whole piece, slice it into thin strips about 5 cm wide.

Crush the juniper berries in a mortar. Sprinkle the bacon with crushed juniper.

Wash the leek, dry it, cut it in half lengthwise, place the leaves in boiling water for 2 minutes, and dry with a towel.
