Cabbage solyanka is a cozy and aromatic dish of European cuisine that combines simplicity of preparation with rich flavor. This dish has roots in traditional Russian and Slavic recipes where cabbage has always held a central place in nutrition. Tender cabbage stewed with onions and carrots gains softness and rich taste, while the addition of tomato juice gives it a slight tanginess. Bavarian sausages add an appetizing spiciness, and fresh parsley completes the flavor composition with notes of freshness. Cabbage solyanka is perfect as a standalone dish or side, especially when complemented with pickled cucumbers and olives. This hearty, warming meal is ideal for cold evenings when you crave something homemade and delicious.

1
Prepare the products.

2
Clean and wash the vegetables, peel the sausages if necessary, and thaw them.

3
Cabbage should be chopped into small pieces.

4
It's better to first cut along into several large pieces, and then across into small strips.

5
Place the chopped cabbage in a pan, add vegetable oil and salt with herbs.
- White cabbage: 1 kg
- Vegetable oil: 100 ml
- Salt with herbs: 1 teaspoon

6
Grate the carrot on a coarse grater.
- Carrot: 1 piece

7
Chop the onion finely.
- Onion: 1 head

8
Add carrots and onions to the pan with cabbage.
- Carrot: 1 piece
- Onion: 1 head

9
Mix everything and let it simmer covered for 10 minutes (you need to check the cabbage's readiness: it shouldn't be overcooked but also not hard, it all depends on the variety).

10
Meanwhile, while the vegetables are cooking, chop the parsley.
- Parsley: 1 bunch

11
Slice the sausages into circles.
- Bavarian sausages: 600 g

12
When the cabbage is almost ready, add tomato juice to taste.
- Tomato juice: 300 ml

13
Add sliced sausages to the cabbage with tomato.
- Bavarian sausages: 600 g

14
Mix and add chopped parsley.
- Parsley: 1 bunch

15
The number of sausages can be increased or decreased.

16
Mix everything and let it sit covered for 5 minutes so all the ingredients can 'make friends'.

17
Divide into portions; you can add pickled or marinated cucumbers and olives as a garnish.
