Potatoes with lard is a traditional Russian dish that combines the heartiness of rustic cuisine with the rich flavor of smoked fat. Its roots go deep into Russian gastronomy, where simple ingredients transform into soulful and warming meals. The lard, fried to a golden crispy crust, gives the potatoes a rich, slightly smoky taste, while added spices—cumin and bay leaf—bring a subtle spiciness. Tender potatoes soaked in aromatic broth become soft and flavorful. This dish pairs especially well with pickles and fresh vegetables and can also serve as an excellent side for meat dishes. Its simplicity in preparation makes it a favorite choice for family dinners on cold evenings.
