Meat stew is a traditional dish of Russian cuisine that combines simplicity of preparation with rich flavor. It is believed that such meat stews originated as a way to prepare hearty and nutritious food for peasants and travelers. This version uses beef tenderloin, which becomes soft and juicy when stewed, while the combination of vegetables—potatoes, cabbage, carrots, and peppers—gives the dish a sweet and spicy taste. Onions and garlic add aroma, making it particularly appetizing. The stew is perfect for family dinners as well as gatherings with guests, and its thick consistency warms and satisfies during cold weather. This dish can be served with rye bread or sour cream to enhance its homely comfort.
