Potato bun with smoked goose

Bake the potatoes until done in coals or foil, then cool. Use a spoon to scoop out the flesh from the potatoes, mix with grated cheese, spices, and part of rye flour. Cool.
- Potato: 10 pieces
- Suluguni cheese: 1 piece
- Rye flour: 3 tablespoons
- Black peppercorns: to taste

Fry the goose meat (it can be replaced with duck) in a portion of butter and stew with spices, thyme, and bay leaves until fully cooked. Shred the meat into fibers, season to taste, add finely chopped dill, roll into small balls, smoke lightly and cool.
- Goose: 200 g
- Butter: 300 g
- Bay leaf: 1 piece
- Fresh thyme: 2 sprigs
- Dill: 1 sprig
- Black peppercorns: to taste

Divide the potato 'dough' into equal parts, roll out flatbreads by hand, and place meat balls in the center. Close the resulting ball and roll it into a sphere. Coat it in starch, dip in beaten egg, then coat in rye flour, and dip again in egg before coating in breadcrumbs. Fry the balls in clarified butter for about 3 minutes.
