Ghouriba (that's the most euphonious way to say ghoribas) is a traditional Moroccan pastry in the form of small flattened balls, usually very crumbly and sweet. Ghouriba is prepared in different ways, there are versions with semolina and coconut flakes, without flour at all, or from dough very similar to shortbread, with sesame. This version is made with wheat flour, ground almonds, oatmeal and orange zest. Ideal with mint Moroccan tea.
