
Tapioca (pearls) is cassava-root starch in the form of small or large white pearl balls, flavourless, that turn translucent, springy and slightly chewy when boiled. It is cooked for puddings and desserts, the large pearls for bubble tea (boba), and added to kissel, soups, pie fillings and as a thickener.
