Agave nectar (syrup) is a liquid sweetener of the juice of the hearts of blue or black agave, from light golden to dark amber, sweeter than sugar, with a neutral or light caramel taste and a low glycaemic index; it dissolves well in cold liquids. It is used instead of sugar and honey in coffee, tea, cocktails, smoothies, lemonades, baking, desserts, sauces and dressings, including in vegan recipes.

The strength of tequila is diluted with agave nectar, pineapple shrub and sorrel. Recipe by Taco Bar head bartender Ilya Pudovkin.
