Potato casserole with cod liver

In the depths of the potato casserole, cod liver plays the same role as pieces of butter in Kiev cutlets. The hot shell of minced meat or mashed potatoes should take it to the very heart and become as tender as possible. During heat treatment, the oily essence of the liver will manifest itself even more vividly, but at the same time it will not lose its character - and between layers of hot mashed potatoes, the liver will feel not like a lumpy puddle of fish fat, but like a fish fondant with an amazing texture, creamy and elastic at the same time.

Cod Liver Sandwiches with Dried Cranberries

In this recipe, we tried to find several new combinations for cod liver. The delicate texture of the liver gets along with a light yogurt dressing, the peppery sriracha sauce invigorates the plot, the crunchy salad prevents monotony , and the celery adds freshness. We decided not to mince words with the eggs: when cut, the halves of the eggs look more appetizing than if we had turned them with the liver into a homogeneous spread. An unexpected addition is dried cranberries, which set off the fatty liver with a slight sourness. In short, if you wanted sandwiches with an interesting plot, these are in front of you.

A modern take on the same cod liver salad that was a staple at every Soviet feast. Instead of turning the liver and egg into a monolithic grey mass, we fluffed it up with a pile of green leaves. Classic vinaigrette dressing, olives, green beans, tomatoes and finely chopped sprats, merging into a common chorus of ingredients, give the salad Mediterranean notes, bringing to mind Nicoise.

Draniki with cod liver
Draniki with cod liverBelarusian cuisine | Breakfast

A fantasy on the theme of bruschetta in the Russian style - a consensus of cod liver, onion and boiled egg diluted with a pickle to rid the liver of excess amorphousness and smooth out the taste of fish oil. The cheese cap on the top is mainly for decoration, because brown liver itself does not look very attractive, so you want to dress it up and decorate it. And instead of toast, a draniki - you can't spoil fish with potatoes. Only one condition is important: that you do not forget to blot the potato pancakes with a paper napkin, thus collecting oil from the surface, and serve immediately with the liver melting on the hot surface of the draniki.

Cod liver forshmak

The replacement of the usual herring with cod liver in the forshmak score looks more than convincing: firstly, using offal in food is very Jewish, secondly, cod livers win over herring in terms of tenderness , valence of combinations, and they do not have too much impudent saltiness and bold fish taste. In consistency, this turns out to be almost a mousse, whose smooth texture is especially cleverly combined with crispy tartlets or toasted baguette crust.
