
Blackcurrant lambic beer (cassis lambic) is a Belgian spontaneously fermented sour beer infused on blackcurrants, of a deep purple-red colour, with a dense pink head, a bright currant aroma, a sweet-sour taste with a vinegary-fruity tang and a light tannin. It is drunk very cold as an aperitif and a dessert drink, served with chocolate and cheeses and used in sauces for game.
