
Asafoetida (hing) is a resinous spice from ferula root as a powder with a sharp sulphurous-garlicky smell when raw, which turns into a mild onion-garlic aroma when fried in oil. It is used by the pinch in Indian cooking: in dals, vegetable curries, tempering, and also as a replacement for onion and garlic.
