
Amaranth grain is very small round grains of the pseudocereal amaranth, light beige or golden, gluten-free, with a high content of protein, lysine and minerals; when cooked it gives a viscous porridge with a fine roe-like texture and a nutty, slightly peppery taste. It is cooked into porridge, sides, soups, added to cutlets, fritters, bread, and also popped (pop amaranth) for bars and topping.

A very filling salad, the basis of which is avocado, full of fats, and quinoa - a source of carbohydrates. In principle, you could just pour olive oil over them, and it would already be great, but chef Boris Jovanovic from the restaurant Community supplemented their union with all sorts of interesting ingredients.
