This isn't the classic Matador with pineapple and lime juice, but in terms of flavor combinations, cilantro is as natural an ingredient in tequila cocktails as lime or salt.

To serve, you will need an ice ball with a diameter of about 7 cm: it can be cut from a block of ice using a regular short-bladed knife.

Pour all ingredients except cilantro into an ice-filled shaker, shake, and strain over ice balls in a glass. Garnish with cilantro and serve.
- Tequila: 50 ml
- Dry white vermouth: 20 ml
- Sugar syrup: 2 teaspoons
- Cilantro: 1 stem
- Celery bitters: 2 ml
