
Yuzu is an East Asian citrus the size of a mandarin with a knobbly yellow or green peel, a small amount of very sour juice and many pips, with an intense aroma combining grapefruit, mandarin and lime. The juice and zest are used above all: in ponzu, sauces, dressings, marinades, with fish and seafood, in yuzu kosho, and also in drinks, sorbets, creams, jelly and confectionery.
