White kvass is a light fermented drink of wheat and rye flour or malt, water and a starter, cloudy-beige, more sour and less sweet than the dark kind, with a pronounced lactic and bready tang and a weak carbonation. It is drunk chilled, but is more often used as a sour base for okroshka, beetroot soup and cold soups, and also for dough, marinades and braising meat.
