
Butterfly pea flower tea (anchan) is a herbal drink of the dried bright blue flowers of Clitoria ternatea, caffeine-free, with a mild grassy-woody taste and a light sweetness, giving a rich blue infusion that turns purple and pink when lemon is added. It is drunk hot and cold with honey, used as a natural colouring for drinks, rice, noodles, cocktails and desserts.
