
Dried lima beans (butter beans) are large flat kidney-shaped beans of a cream-white or greenish colour, hard, needing soaking and long cooking, with a very tender, buttery, slightly starchy flesh and a mild creamy taste. They are boiled for soups, stews, purees, sides, salads, braised with vegetables and meat (succotash), made into spreads and added to braised beans.
