
Sambal is an Indonesian-Malay spicy paste-sauce of ground fresh or dried red chilli with salt, garlic, shallot, shrimp paste (terasi), palm sugar, lime juice and sometimes tomatoes, bright red, very fiery, aromatic, with sour-salty and umami notes. It is served as a table condiment and dip with rice, noodles, fry-ups, grilled meat, fish, eggs and vegetables.
