Peach vinegar is a fruit vinegar of fermented peach juice or pulp, light golden, with a mild moderate acidity, a delicate aroma of ripe peach and a light fruity sweetness. It is used in light dressings for summer and fruit salads, salads with mozzarella, chicken and nuts, in marinades for poultry and pork, in dessert sauces and for shrubs and refreshing drinks.

Anatoly Derenchuk, chef of the Fish Culture restaurants, shared the recipe with us.
