
Papadum (papad, Indian lentil wafer) is a very thin round wafer of legume flour (urad, chickpea, lentil) with salt, spices (black pepper, cumin, chilli, asafoetida) and soda, dried until hard, which is fried in oil or dried over an open flame before serving, whereupon it puffs up instantly into a brittle crisp disc. It is served as a bread-snack with Indian curries, dal, chutney and rice.
