The recipe is good because all the snack illiquid items will do: pieces of a cheese plate that have dried out on the table, "butts" of smoked sausage or unsightly pieces of carbonade, ham and other basturma. All this can be cut , mixed in any proportions and added to the muffin dough. And the dough in this recipe is just the kind that a tired person from a feast can handle in the morning: you don't have to wait for it to rise, it takes less than half an hour to bake, and the sour cream gives these snack muffins an appetizing blush and extraordinary tenderness.

On the other hand, the rank-and-file soldiers of the Northern armies were recruited from the peasants, and the dishes in their diet were not much different from the usual village soups and stews. This pea soup, in Polish - grochówka, is mentioned several times in the saga of the witcher. The first time - when Geralt dreamed of such a soup in the camp of Marshal Vissegerd and was ready to give all the sturgeon and all the truffles in the world for it. The second time - when in Toussaint, in the courtyard of the Zubarran castle, Geralt finally had the opportunity to try this soup.

The name is, of course, associative - it's not like every restaurant in Munich serves exactly this kind of shchi. But all the attributes of good Bavarian cuisine are there: sauerkraut (which the Germans definitely know a thing or two about), pork ribs ( the broth is cooked on them), smoked meats used in the dressing. Does it remind you of anything? It's a paraphrase of the familiar solyanka, only here the meat aroma is mixed with beer: a shot of good, aromatic beer is added to the general chorus of ingredients at the end of cooking . The recipe is taken from the Onyx restaurant in Torzhok and published in the book "Geography to Taste with Nika Ganich. Gastronomic Guides.
