Quillaia (soapbark) extract

A natural foaming agent and emulsifier from the bark of the quillay tree, rich in saponins, in microdoses in carbonated drinks, cocktails and molecular foams.

Quillaia (soapbark) extract (E999) is a natural foaming agent and emulsifier from the bark of the Chilean quillay tree in the form of a dark liquid or powder, rich in saponins, giving a stable fine foam. It is added in microscopic doses to carbonated drinks (cream sodas, tonics, some lemonades), cocktails (for a foam 'head' without egg white) and molecular 'air' foams (espumas).
