Chopped nuts (nut crumb) are finely chopped nut kernels (walnut, hazelnut, almond, pecan, pistachio or a mix), with an oily taste and a crunchy texture. They are sprinkled over cakes, pastries, croissants, ice cream, porridges and desserts, used to coat sweets and curd fritters, and mixed into dough, fillings, baklava and granola.

The recipe was shared with us by the chef of the Kalabasa restaurant.

Caramel and nut apples are an exquisite dessert of Italian cuisine that combines the crunchy freshness of fruits with the velvety sweetness of caramel and nut crumbs. This recipe has roots in traditional European fair treats where caramelized apples were sold as a symbol of celebration. Red apples are chilled, coated with delicate creamy caramel that melts to perfection, and then rolled in nut crumbs, creating a harmony of textures and flavors. This treat is perfect for cozy home evenings, fair festivities, or simply sweet indulgence. The apples remain juicy inside while acquiring an appetizing crispy glaze outside. The simplicity of preparation and incredible taste make this dessert a true decoration for any table.

Lobio with nuts is a traditional dish of Georgian cuisine, rich in the aromas of fresh spices and nuts. The origins of this recipe date back centuries when beans were one of the staple foods on the Georgian table. Boiled beans combined with sautéed onions and ground walnuts acquire a soft creamy texture, while added garlic and red pepper give a slight spiciness and zest. This dish serves not only as an independent treat but also as a wonderful side dish to meat or fresh bread. Chilled lobio is traditionally sprinkled with fragrant herbs, enhancing its freshness and flavor. It is perfect for both everyday meals and festive gatherings, impressing with its harmony and depth of taste.

A dessert for those who set limits for themselves. These buns contain no yeast, sugar, eggs, or dairy products, the dough holds its shape due to the sticky properties of flaxseed flour, and the sweetness comes from the banana pulp. Of course, this doesn't turn them into a magical dietary product, but it's nice to know.
