Spanish artichoke with paprika

4 servings

150 minutes

Spanish artichokes with paprika is an exquisite dish of Mediterranean cuisine that embodies the sophistication of Spanish traditions. Artichokes soaked in lemon juice gain tenderness and a slight tanginess, then simmer until soft, filling with rich flavor. The main note of the dish is an aromatic paprika sauce that adds pleasant spiciness and depth of flavor balanced by the sweetness of golden onions. This combination makes the dish an ideal side or light main course. Spaniards appreciate it for its simplicity and elegance, as well as its ability to harmoniously complement fish and meat dishes. Traditionally served with crusty bread or a glass of white wine, highlighting the entire palette of flavors. Tasting this recipe transports you to cozy Spanish taverns where warm hospitality and enjoyment of food reign.

Trim the base of the artichoke, remove the outer leaves. Extract the inner stems and drizzle with the juice of half a lemon. Then cut into 4 cm pieces. Divide the heart into 4 parts. Place everything in a large bowl with water and the juice of half a lemon. Then mix a tablespoon of flour with water, pour the mixture into a pot, add water and a pinch of salt. Cover and bring to a boil. Immerse the artichokes in the pot and cook on low heat for 1 – 1 ½ hours until tender.

    Required ingredients:
    1. Lemon: 1 piece
    2. Spanish artichokes: 1 piece
    3. Wheat flour: 2 tablespoons

Let the artichokes dry, but keep the water they were cooked in. Heat oil in a pan, add finely chopped onion, and cook on low heat, stirring, for 8-10 minutes until golden. Stir in the remaining flour and cook for another 2 minutes. Then add paprika and slowly pour in 450 ml of the water the artichokes were cooked in. Bring to a boil, stirring, and pour the mixture into a large pot. (If desired, you can strain the sauce to remove the onion).

    Required ingredients:
    1. Olive oil: 3 tablespoons
    2. Onion: 1 piece
    3. Wheat flour: 2 tablespoons
    4. Paprika: 1 teaspoon
