The recipe was impromptu invented by the editorial staff's chef and mentor of the School of "Food" Masha Matusova to feed the editorial staff after filming. There can be many transformations here: salmon can be replaced, for example, with cod or even with chicken, which will also go well with coconut. Instead of champignons , you can put oyster mushrooms, shiitake or any other Asian mushrooms in the pan. Cold cucumber soup with crispy tofu

The prototype of this recipe was the Bulgarian tarator - either a drink or a soup made from grated cucumbers. In hot weather, this cucumber liquid is seasoned with sour milk and mixed with ice. We slightly added density to the soup and enhanced the emerald hue by adding fresh spinach to the cucumbers. And for satiety, we threw cubes of fried tofu into the plate: our body needs protein in any weather, but in the summer heat, soy curd is easier to digest than meat. If you season the soup with soy yogurt instead of regular yogurt, the recipe will become vegan.

Moroccan Cold Baked Pepper Soup with Shrimp

Fresh and baked bell peppers are two different products. The former is spicy and bright, but this brightness quickly fades. And after the oven, the pepper develops a completely different taste - sweetness, spiciness , smoky aroma, a much wider palette. In this recipe, the spiciness of baked peppers is enhanced by tart cumin. The result is a liquid version of the Moroccan pepper spread muhammara, which is now fashionable to serve in restaurants. You can pour this soup into glasses, add ice and sip through a straw, like a drink or smoothie. Or, as in this recipe, pour into soup bowls and garnish with shrimp before serving.
