Vegan mayonnaise is an egg-free emulsion sauce based on vegetable oil, water or soy/pea 'milk', vinegar or lemon juice, mustard, salt and sugar, light yellow, thick, creamy, with a mild sour-salty taste close to classic mayonnaise, cholesterol-free. It dresses salads and Olivier, is spread on sandwiches, used in sauces, dips, for baking and as a base for garlic and other sauces.

Almost everything is the same, only instead of eggs - tofu with the same neutral taste, and instead of regular mayonnaise - vegan mayonnaise, which you don't have to make yourself, but buy in specialized supermarkets. The recipe was shared by the brand chef of the Gayane's restaurant Gayane Breiova.

Vegan 'Mimosa' salad is a delicate and colorful dish inspired by the classic recipe of Russian cuisine. Its name refers to the spring mimosa flower due to the bright yellow layer traditionally made from egg yolks. In this plant-based version, this effect is achieved with tofu colored with turmeric. Tender carrots, soft tofu, piquant shallots, and vegan mayonnaise create a harmony of flavors - sweet, creamy, with a hint of spice. This salad is for those who appreciate aesthetic presentation: the layered structure allows each ingredient to shine in flavor. A great choice for a festive table or cozy dinner, it impresses not only with its vibrant appearance but also with its rich taste.

Vegan crab salad is a culinary illusion where plant ingredients cleverly mimic the classic taste of seafood. Inspired by European cuisine, this salad surprises with its tenderness and harmony of textures. Round-grain rice adds softness, while diced carrots contribute a light sweetness and hidden crunch. Tofu plays the role of crab meat, absorbing the flavors of the other components. Corn brings bright sunny notes, and vegan mayonnaise ties everything together with creamy richness. The dish is perfect for those wanting to try something original without animal products.
