
Tandoori masala is an Indian ground blend of coriander, cumin, paprika, turmeric, ginger, garlic, garam masala, cayenne pepper and sometimes red food colouring, aromatic, warm, with a moderate heat and a characteristic reddish-orange colour. It is mixed with yoghurt and lemon juice for a marinade for tandoori chicken, paneer, fish, shrimp and vegetables before roasting and grilling.
