
Tête de Moine cheese is a Swiss semi-hard cheese of raw cow's milk in the shape of a small cylinder, aged for several months, light yellow, with a firm but creamy-at-serving-temperature texture, a rich spiced-nutty, fruity and slightly mushroomy taste. It is not cut but scraped with a special girolle knife into thin 'rosettes' that release maximum aroma, with wine, bread, fruit and nuts.
