
Chanakh cheese is a Caucasian brine cheese of sheep's or cow's milk in the shape of a flattened cylinder, ripened in clay chanakh pots in brine, white or yellowish, dense, layered-brittle, with a sharp salty taste and a pronounced tang. Before serving it is soaked to remove excess salt, cut into salads (Greek, vegetable), crumbled onto khachapuri, put into fillings and served with herbs and lavash.
