
Belper Knolle cheese is a Swiss hard cow's milk cheese in the form of a small 'truffle' ball formed with fresh garlic and sea salt and rolled in black pepper, with a very dense, slightly crumbly centre, a sharp garlicky-peppery taste and a strong aroma. It is grated like parmesan or truffle over pasta, risotto, salads, carpaccio, eggs and soups or shaved thin with wine.
