
Pike-perch (zander) is a freshwater and semi-anadromous predatory fish with white firm lean meat, a subtle, almost sweetish taste, few small bones and low fattiness. It is fried, baked whole and as fillet, steamed and grilled, made into cutlets, quenelles, souffle and stuffed fish, cooked into a clear fish soup and served under Polish or cream sauce.
