
Salted saffron milk caps are orange-red gilled mushrooms salted by the dry or cold method with salt and a minimum of spices, springy, crunchy, with a characteristic resinous-piney aroma and a light peppery note, keeping their bright colour. They are served as a delicacy cold appetizer with onion, sour cream and vegetable oil, with boiled potatoes and vodka and added to salads.
