
Smoked pear are halves or wedges of ripe pear lightly dried and treated with cold or hot smoke (sometimes after light caramelisation), golden-brown, soft, juicy, with a honey-sweet taste, a smoky aroma and a light spiced note. They are served with cheeses (blue, hard), duck, pork and foie gras, put into warm salads with rocket and nuts, onto bruschetta and into desserts.
