
Barberry syrup is a bright red sweet sugar syrup with a barberry taste: sweet-sour, with a pronounced berry tang and a characteristic 'boiled-sweet' aroma (like the sweets of the same name). It is diluted with water and soda into a drink, added to tea, lemonades and cocktails, poured over ice cream, pancakes and curd cheese, used in creams, jelly, soaking syrups and as a flavouring and colouring.
