
Sicilian red prawn (gambero rosso) is a deepwater Mediterranean prawn of a bright red colour even raw, with very tender, sweet, almost creamy meat and a rich umami 'juice' in the head. It is eaten almost raw as prawn tartare, crudo and carpaccio, lightly seared on the grill and pan with salt and olive oil and served with pasta, risotto and white wine.
