
Rose petal jam (gulbesheker) is an aromatic jam of the petals of fragrant tea or Damask roses ground or reduced with sugar, lemon juice and a little water, pink or ruby, translucent, with tender petals in the syrup, sweet with a light tang and an intense floral aroma. It is served with tea, spread on bread, put into baklava, Turkish delight, pies and desserts.
