
Pineapple shrub (drinking vinegar) is a concentrate-syrup of pineapple flesh, sugar and vinegar (apple or white), sometimes with spices (pepper, ginger, clove), golden-yellow, sweet-sour, with a bright tropical taste and a refreshing vinegar tang. It is diluted with sparkling water for a soft drink, added to cocktails (tiki, spritz, daiquiri), poured over ice cream and used in dressings and marinades.
