Pine shoots (spring tips) are the young spring growth of pine 3–7 cm long with light green soft needles, with a delicate resinous-coniferous aroma, a light tang and citrus-honey notes, less bitter and resinous than mature needles. They are candied into syrup and honey, infused into liqueurs and vinegars, made into jam, added to marinades for game and fish and used to flavour drinks and desserts.
